AF 300 Digy Fermenter

Description

The fermenter ensures the mixing, fermentation, maturation and conservation of the sourdough. With its 300 litre bowl, you can produce up to 200 kg of liquid to semi-pasty sourdough.
Its high performance tools and scraping system guarantee an optimal development of the gluten network, without shearing. It allows an optimal thermal exchange and good homogenization.

Thanks to this Digy touchscreen interface, it’s possible to customize and save 3 sourdough recipes. The settings can be adjusted for the following 4 phases (mixing, fermentation, maturation, preservation) in each recipe:

  • The duration
  • The rotation speed of the tool and bowl
  • The desired temperature

This feature ensures repeatability and consistency of sourdough production.

The AF 300 has been designed to ensure easy operations including draining, cleaning, and maintenance. The fermenter offers optimal hygiene with tools, scrapers and cover easily removable without tool. Its drain valve, which is flush-mounted on the product side to ensure full passage of the sourdough.
